Lake Shore Pickled Beets

Cook beets until tender, remove skins and cut into chunks if beets are large and put into bottles.

Combine:

1 C white sugar

1 C brown sugar 

5 C water

5 C vinegar

1 tbsp salt

Mix sugar mixture in a pan and cook until dissolved.  Pour over beets and process in hot water bath for 35 minutes.

Best Zucchini Relish


    • 10 cups fresh zucchini, unpeeled and ground ( about 4 large)
    • 4 cups ground onions
    • 5 tablespoons salt
    • 2 1/4 cups white vinegar
    • 4 1/2 cups sugar
    • 1/2 teaspoon pepper
    • 2 teaspoons celery salt
    • 1 tablespoon nutmeg
    • 1 tablespoon dry mustard
    • 1 tablespoon turmeric
    • 1 tablespoon cornstarch
    • 1 green peppers, finely chopped
    • 1 sweet red peppers, finely chopped

Directions

  1. Mix first 3 listed ingredients together well and let stand overnight.
  2. In morning, drain; rinse in cold water and drain again.
  3. In large kettle mix the next 8 ingredients and bring to a boil.
  4. After a boil is reached, add the zucchini mix along with the green and red sweet pepper.
  5. Bring to a boil again.
  6. Simmer uncovered, stirring occasionally, for 30 minutes.
  7. Pour into hot jars and process in hot water bath for 5 minutes, to seal.
 This is delicious on brats or burgers.  I have also used it in Tuna Salad and Potato Salad.

Frozen Fresh Corn


8 C cut corn
1 C sugar
1 cube margarine
water to cover corn
Bring to a boil. Bag and freeze

Mom's Homemade Salsa


Ingredients:
1/2 bushel tomatoes
5 green peppers,
10 yellow onions,
3-4 aneheim chili’s
1-2 jalapano peppers
1 C. apple cider vinegar
1/2 - 3/4  C sugar 2 tbsp black pepper
1 tsp garlic powder (I use minced from a jar + powder)
1/4 - 1/2  c. salt
2 tbsp cumin
2 tsp paprika
4 tbsp worchesteshire sauce
1 large zucchini grated
1 qt. tomato paste - I use 4 small or 2 lg. cans
 
Directions:
Skin and cut up tomatoes.  Chop all vegetables in a food processor.  Mix all ingredients together except the tomato paste. I mash it good with a potato masher. I even drain off some of the juice before I mix it all together so it takes less time to cook. Cook for 1 hr. or until desired thickness. Add paste. Cook about 1/2 hr. more. Taste for flavor and then bottle. I process this about 15 minutes.
Makes about 19 pints
