Peanut Cookies

1 C shortening

1 C brown sugar

1 C white sugar

2 eggs

2 C flour

2 C oatmeal 

1 t. baking powder

1 t salt

1 t baking soda

1 t vanilla

1 C salted peanuts

Mix all together.  Bake 350 degrees for only 10 minutes.  They will not look done, but they are.

Almond Roca Candy                         


2 Cups Sugar
4 Cubes Butter
1 C. Sliced Almonds
1 large bag chocolate chips 

Melt butter and sugar in a heavy bottom pot.  Cook stirring constantly until the mixture melts and then becomes thick.  Stir until the mixture becomes oily. When it becomes creamy again add 1 C sliced almonds.  Pour onto a large cookie sheet and spread out evenly.  Pour a bag of chocolate chips on top and let them melt.  Spread carefully over the almond roca until smooth. If you would like you can add finely chopped walnuts, almonds or almond slices to the top. Let cool and break into pieces.

2 Hour Rolls

1 1/3 Cup scalded milk
2 eggs
1 tsp salt
4 tbsp sugar
2 tbsp yeast dissolved in 1/2 cup warm water
4 1/2 C flour

Mix egg, salt & sugar, add cooled milk & yeast mixture.  Add flour and stir well.  Don't knead.
Let raise 2 hours, put dough onto floured surface and pat out to 1/2 to 2/4 " thickness

Cut with round cookie cutter, score down the center.
Melt 1 cube butter.  Dip both sides into butter.  Place rolls, (Folded) in 9 x 13 pan side by side.

Bake 400 for 12 - 15 minutes

Cindy's Freezer Fudge

4 Cups Sugar
1 Can evaporated milk
2 12 oz packages milk chocolate chips
2 cubes butter
1 tsp. vanilla

Bring milk & sugar to a boil (in large pan)
Boil 11 minutes stir constantly.  Put chocolate
chips and butter in a bowl.  Pour boiling mix over and stir until well blended.  Add vanilla and pour into a
9 x 13 pan and freeze.

Creamy Grape Salad - Aunt Cindy


8 oz cream cheese
½ C sour cream
½ tub cool whip
2/3 C brown sugar
1 tsp vanilla
About 4 pounds of red seedless grapes.

Mix all and then fold in red seedless grapes. Chill.

Monday Meat Pie - Aunt Cindy



 
Ingredients:½ cup chopped onion
1 tbsp shortening
1 lb hamburger
2 medium carrots cooked and sliced
2 cups cooked cubed potatoes or 1 can of veg-all
4 ounces (1 cup) shredded cheese
½ cup mayonnaise
1- 10 3/4 ounce or 1 1/4 cup beef gravy
1- 14 ounce pkg corn bread mix (I just use recipe on container of cornbread)
 
Directions:In saucepan cook hamburger and onion togther until brown.  Add cooked potatoes & carrots.  Combine mayo, & beef gravy. Heat till bubbling.  Add 1/2 of the cheese and pour into a 9 x 13 casserole dish.  Prepare corn bread mixture add remaining cheese spoon over hot meat mixture. Bake at 350 for 25 minutes or till cornbread is browned.

Best Baked Beans - Aunt Cindy


1/2 - 1 1/2 # ground beef
1 large onion
1/2 lb bacon
1/2 c brown sugar
1/3 c white sugar
1/4 c catsup
1/2 c bbq sauce
2 tbsp molasses
2 tbsp mustard
1 15 oz can pork n beans
1 15 oz can kidney beans
1 15 oz can lima beans

Brown hamburger, onion, and bacon. Drain. Mix the rest of the ingredients. Do not drain the beans. Bake 350 for 1 hour or longer depending on how thick you want them.  Stir occasionally.
