Easy Panna Cotta - Epicurious

INGREDIENTS

    • 1 envelope unflavored gelatin (about 1 tablespoon)
    • 2 tablespoons cold water
    • 2 cups heavy cream
    • 1 cup half and half
    • 1/3 cup sugar
    • 1 1/2 teaspoons vanilla extract

PREPARATION

    1. In a very small saucepan sprinkle gelatin over water and let stand about 1 minute to soften. Heat gelatin mixture over low heat until gelatin is dissolved and remove pan from heat.
    2. In a large saucepan bring cream, half and half, and sugar just to a boil over moderately high heat, stirring. Remove pan from heat and stir in gelatin mixture and vanilla. Divide cream mixture among eight 1/2-cup ramekins and cool to room temperature. Chill ramekins, covered, at least 4 hours or overnight.
    3. Dip ramekins, 1 at a time, into a bowl of hot water 3 seconds. Run a thin knife around edge of each ramekin and invert ramekin onto center of a small plate.  Serves 8

1/2 C sugar
2 tsp cornstarch
5 egg yokes
2 C heavy cream
1/2 C half & half
2 tsp vanilla extract
4 T brown sugar

In a bowl, blend egg yolks, sugar and cornstarch.  In a heavy saucepan, heat cream & half and half until light skin forms on top.  Remove from heat and cool slightly.  Pour 1/2 cream into egg mixture beating quickly.  Pour egg mixture into remaining cream stirring constantly.  Cook without boiling until mixture coasts the back of a spoon.  Remove from heat & add vanilla.  Pour into four 6oz ramekins and chill overnight.  Before serving, sprinkle each with 1 T brown sugar and place under broiler until bubbly.  Chill and serve.

One hour bread

Simple One Hour Homemade Bread
Makes 2 loaves
5 1/4 cups white bread flour
2 – 4 Tbsp. sugar
1 1/2 tsp. salt
1 1/2 Tbsp. (rounded) saf-instant yeast
1 1/2 Tbsp. oil
2 cups warm water (somewhere between 100 and 115 degrees Fahrenheit)
1. Mix dry ingredients.  Add oil and water.  Mix for 1 minute and then check the consistency of the dough.  The dough should be very sticky.  If it is too dry, add more water.
2. Mix for 5 minutes.  (Do not add any more flour after the dough has finished mixing.)
3. Spray kneading surface with cooking spray and turn dough out onto surface.  Knead dough briefly until it has a smooth even consistency (this will only take several turns of the dough to accomplish).
4. Divide dough into 2 pieces (or more if you wish to have smaller loaves) and shape loaves into desired shapes and place on greased baking sheets.  Cover with a large dish towel and let rise for 25 minutes.
5. While loaves are rising, preheat oven to 350 degrees Fahrenheit.  When loaves are ready to go into the oven, use a sharp knife (you can lightly spray your knife with cooking spray to prevent dragging) to make several slashes in the top.  Make each cut about 1/4-inch deep at a 30 degree angle.  Bake loaves for 25 minutes, or until they are golden brown.

Delicious White Bread

6-7 Cups lukewarm water
2 T Salt
1/2 C oil
1 C sugar
13 - 16 C flour
1 C Instant powdered milk
1 C potato flakes
2 Tb SAF yeast

Mix warm water, sugar and yeast in mixing bowl.  When the yeast begins to grow, add salt, oil, powdered milk and potato flakes.  Begin mixing.  Add flour a cup at a time.  When the dough starts leaving the side of the bowl, stop and see if it is slightly sticky.   I then oil a large bowl and put the kneaded dough in and then turn it with the oil side up.  Put a dishtowel over the bowl and let it double in size.  Once it has doubled, make your bread into loaves or rolls.  Let it raise again and then bake at 350 until golden brown.
